All about Ghee

Like any clarified butter ghee is composed of fat, 62% of which consist saturated fats. The word ghee comes from Sanskrit ‘Ghrta’ meaning sprinkle, which means that the milk fat is rendered from the butter to separate the milk solids and water. It’s essentially a form of clarified butter. Traditionally, ghee is always made from the milk of cows, which are considered sacred, and it is a sacred requirement in Vedic yajna and havan (fire sacrifices) through the medium of fire.

Ghee is sometimes also called Desi ghee or Asli ghee to distinguish it from ‘vegetable ghee’. It can be used in place of butter and other fats in a variety of culinary and non-culinary ways.

Adulteration in Ghee

There is an adulteration has been determined in ghee since last few years. According to Food Safety officers of India, 50% of total ghee has been found adulterated in 2015. People think around 1,000 times when they have to buy ghee from the store. Not taking any care and precautions while packaging or the storage facility are some of the reasons behind ghee adulteration.

How to check the purity of Ghee?

  • Put a spoon of ghee in your palm, if it starts to melt itself that is pure. Normally, pure ghee melts on the body temperature.
  • Put a spoon of ghee and heat it. If it melts quickly and appears dark brownish colour, that is pure ghee. Within a few seconds, the ghee will be melted. If it takes a longer time to melt and appear light yellow in colour, it is impure. By examining these ways, you can easily check the purity of ghee.
